Ninkasi was known as the Sumerian Goddess of beer or fermentation. Ninkasi would prepare fresh beer every day and would use the best ingredients and only fresh water which were enjoyed by the lowest of laborers and the highest of nobles. The Sumerians would bake thick loaves of bread which were later mashed by adding a large amount of malt to get the proper conversion of starch. They were later kept for cooling down, which was done naturally. After the sweet liquid was drained from the grains they would later add yeast. After all these processes were complete, they would keep it for fermentation and later serve them in large jars. Beer brewing has been into existence since the Mesopotamian times. In today ’s time when you hear the word Ninkasi, a beer brewery is likely to come in mind. A brewery that focuses on not losing the touch of the ancient recipes and ingredients. Beer brewing might not be the oldest profession but it has been around for a very long time and was considered safer to drink than water. The Sumerians worshipped the beer and understood its value; it gave quality to life. They understood the importance of beer in their communities and would rely on the local brewery to socialise and bond with one another.
